Il Forno Volante is a street food business, designed and created by two young pizza chefs.
Miri, our senior pizza chef lived and worked in Florence Italy for over 23 years, and was trained by the award winning “Best Pizzaiolo in Italy” – Giovanni Santarpia. Miri brings his years of experience and understanding of the science behind the perfect pizza.
Rhys, from somewhat less exotic London, began working as a waiter in a local pizzeria. Drawn by the kitchen he worked his way through Kitchen Porter, Chef de Partie, to Sous Chef, where he found his natural talent, for making pizzas.
After many, many hours working together we decided to translate our friendship, knowledge and passion into making our own exceptional pizzas, and so Il Forno Volante (The Flying Oven) was born.
To ensure the taste and texture of your pizza is as you’d find it in Italy we needed the right oven. Our stone based, wood fired oven is imported from Italy, and at above 520°C will perfectly cook your pizza in under two minutes.
You then need the right ingredients. At Il Forno Volante, we import fresh ingredients from all over Italy; our flour, Verace farina; tomato, San Marzano; cheeses, Fior di Latte, Scarmorza Affumicata and Parmigiano Reggiano; and our meats, Spianata Calabrese and Prosciutto Cotto.
When we combine the flavours of rich Italian produce with the smokiness of our wood flame, you have the perfect pizza, as good as you’d have in Naples.
We’re Il Forno Volante because our wood fired pizza lives in our spick & span catering van, so when you have the need for the perfect pizza, we’ll fly (ok, drive) to you.
